How Our Infrared Elements Actually Work in Your Deck Oven
If you’ve ever spent a morning fighting with a deck oven, you know the struggle. You want that perfect, crackling sear on the outside, but you don’t want the inside of your dough to turn into a brick. That’s where our shortwave infrared (IR) elements come in. Think of it this way: most ovens just blow hot air around. That’s fine, but it takes forever and often dries out the crust before the middle is even warm. Our IR elements don’t bother with the air. They send energy straight into the food. It hits the core of the dough fast, giving you that soft, airy center and a crisp exterior without the wait. The secret is in the speed. Because we pack a lot of power into a small quartz footprint, these things heat up almost instantly. You aren’t sitting around for 20 minutes waiting for a massive slab of stone to get up to temp. You just turn it on, and you’re ready to bake. It’s a huge win for your morning workflow. As for how we build them? We use high-purity quartz glass. We had to, because these elements go from cold to scorching in seconds, and regular glass would just shatter. Inside, there’s a tungsten filament wrapped in halogen gas. That gas keeps the metal from evaporating too quickly, which means the lamp lasts a lot longer before you have to swap it out. When it comes to installation, we keep it simple. We use R7s or SK15 bases, which are the standard for most drop-in replacements. Just make sure the fit is tight. If the connection is loose, you’ll get arcing—which is basically a fancy way of saying it’ll spark and burn out your socket. A couple of things to keep in mind. These elements put out a ton of heat, but they’re hungry for power. If you’re upgrading to a higher-output version on a 230V line, just double-check your breakers so you don’t trip the power in the middle of a rush. Also, a pro tip: keep them clean. Since they get so hot, a single drop of grease or oil on the quartz tube can create a “hot spot.” That’s usually what kills the element prematurely. Give them a quick wipe, keep the oil away, and they’ll treat you well for a long time.
